Clarence House vineyard. Three clones of Chardonnay sourced from the east-facing Block 4 on dolerite soils.
Whole-bunch pressed, lightly settled overnight and racked to French oak for wild barrel ferment.
This, our Francois Chardonnay, came from a single (new) Francois Freres barrel that wasn’t ready for blending during our usual Chardonnay assemblage in February. The wine and oak marriage was unresolved and it simply needed more time.
Thus, the bung was taped and it was left alone over vintage, to be inspected in June and WOW, what a different a little patience made.
The oak had completely integrated, the length had increased immeasurably, the whole structure of the wine had cinched up and come together.
So a single, new barrel (100% new oak) of Chardonnay was bottled in July, after a 16month elevage.
It’s an outlier. An orphan. A supercharged, supernova Chardonnay of immense concentration and intensity.
